I spent the last two weeks at WDW, I did not book park reservations until each morning when I woke up. I also had no ADR's and decided to just wing it depending on where I was at meal time. It all worked out fine.
I discovered Chicken Guy at Disney Springs and really, really like the chicken there--liked it enough to eat there 3 times over my stay. I understand now why I have seen a line there many times in the past.
I also discovered the quick service place in China up on the hill behind where the drummers are located, can't think of the name right now. The food was very good, plentiful and the setting is just a lovely place to enjoy your meal with the koi pond, fountains and beautiful trees up there that are in bloom now.
I also discovered the bar at Steakhouse 71 when I was looking for something quick and easy to eat a couple of evenings. I am not a drinker, but I enjoyed the crab cakes and onion rings. You only got two of the crab cakes, and they were not huge, but they were mostly crab and very little filling. Onion rings were very good as well. I understand that their pancakes at breakfast are simply amazing, but I haven't experienced them personally.
The sticky chicken wings at Bar Riva at the Riviera were very, very good. I would go just for those if I was staying there and needed just a snack to tide me over.
I missed a lot of my favorites-Homecoming, Blaze Pizza, Toppolino, Via Napoli, but I will catch them on another trip.

China, or Japan? I know of the QS place up the hill in Japan, but didn't realize that China had an "up the hill" area.

Hmm maybe I will give China QS a try again. Went many years ago, and swore would never go back. Japan QS and sit down are always good

China, we often just get a couple eggrolls for fun. No real food, though.
There was a year when every night, at around 8pm wife decides we had to take the bus to Springs so she could get the salad at Chicken Guy, for a late dinner. So I would get the three strips combo. Or sometimes the sandwich. Out of a two week trip, this happened at least half the time. THEN we would catch the bus to OKW.
The other half the nights we were at Blaze Pizza hee heeeeeeeee

OP, pretty sure you meant Japan, and not China.
All that you mentioned are great QS places.

I can't see ever going to the China quick service (or table service) restaurant because at home we're 15-20 minutes from Chinatown and really excellent Chinese restaurants.
It's been a few years since we've been to the Japan quick service restaurant. It's usually quiet and the food is decent.

I like China QS as well as Japan's QS. Always a great stop for pot stickers and egg rolls.

There are a lot of decent QS places at WDW and we choose to eat at them more often now than TS. I've never had the Japan QS, but I've been up there to get the Tokyo Sunrise drink when the little stand is closed. My DD & DH love the China QS. I'll have to try the Steakhouse 71 bar sometime. We ate in the restaurant and it wasn't great and I don't think we'll likely go back. The DRR QS might be my favorite resort QS and we will sometimes leave DHS just to eat there.

Neat! Will have to try this one. Right by the bus stop too. A hidden gem fast food place I like is Poultry Palace at Disneyland (California Adventure). It's a little shack in the back of the park by Incredicoaster. Try it if you're ever out in California.

If you get the opportunity, please order the "bacon and eggs" at Steakhouse 71. It's not only a very novel dish, but it includes their cheese grits, which are to die for.
As for other QS, well I gotta say I've *heard* lots about the Regal Eagle, but had never gone there until last month and we are SOLD on the place! Definitely going back -- we were really happy with our meal there.

Thanks for the recommendations. I’ll be trying some of these on my next solo trip. I do agree on the Japan QS. Very pleasant up there.
